Canaves Collection is a family-rooted Greek luxury hospitality house built almost entirely around Oia, Santorini. Its story began in 1985, when the Chaidemenos family transformed traditional seventeenth-century canaves — cave houses once used for wine storage — into intimate accommodation overlooking the caldera. From those early rooms grew a collection that helped define the modern visual language of Santorini luxury: whitewashed architecture, cave forms, private terraces, plunge pools, Aegean views and highly personal service. In 2026 the official portfolio comprises four operating hotels — Canaves Ena, Canaves Oia Suites, Canaves Sunday and Canaves Epitome — together with villas and private accommodation.
The brand
Canaves Collection is an independent Greek luxury hospitality collection based in Oia. The current official directory presents four hotels and resorts: Canaves Ena, Canaves Oia Suites, Canaves Sunday and Canaves Epitome. Each interprets Santorini at a different scale. Canaves Ena is an intimate 18-suite cliffside hotel; Canaves Oia Suites combines cave architecture, caldera views and a seventeenth-century cave spa; Canaves Sunday is an eight-suite hideaway; and Canaves Epitome expands the system into a more spacious resort of suites and villas above Ammoudi.
The collection remains deliberately concentrated in one destination. Rather than using Santorini as a launch platform for a broad international chain, Canaves continues to deepen its relationship with Oia through accommodation, gastronomy, wellness, yachting, wine, craft and local experiences. The continuity comes from family ownership, a shared service culture and a highly recognisable interpretation of Cycladic architecture rather than from identical hotel layouts.
Philosophy
Canaves is rooted in the idea that luxury should intensify the experience of Santorini rather than distract from it. The original conversion of cave houses established a model in which architecture grows from the island's geology and settlement pattern. White forms, stone, terraces, pools and framed views are used to place the caldera, sea and sunset at the centre of the guest experience.
Hospitality is personal and experiential. The collection's current guest proposition extends beyond accommodation through private sailing, food and wine tours, cooking, pottery, wellness and other locally grounded activities. Gastronomy and spa are integrated into the same destination language. The aim is not to create a self-contained resort universe, but to make Santorini more intimate, accessible and memorable through the lens of a family hospitality house.
What distinguishes it
Canaves grew from actual canaves. The name is tied to Santorini's traditional cave structures, giving the collection an unusually literal relationship with local architecture and wine history rather than a retrospectively invented brand aesthetic.
Oia remains the centre of gravity. All four current hotels are in the Oia area, allowing the collection to build exceptional depth in one of the world's most recognisable luxury-hospitality landscapes.
Four hotels serve different scales of intimacy. Canaves Sunday has only eight suites, Canaves Ena has 18, while Canaves Epitome offers a more expansive suite-and-villa resort environment. The collection can therefore vary privacy, space and resort infrastructure without leaving its core destination.
Gastronomy forms a network. Petra, Elements, Omnia and other dining concepts create a culinary ecosystem across the properties, allowing restaurants to function as destination experiences rather than simple hotel support facilities.
Experiences extend into the island. Private yachts and catamarans, wine, food, pottery, cooking and local-guided exploration connect the hotel stay with Santorini's coastline, craft and agricultural culture.
Canaves Collection is a weaker fit for travellers seeking a broad international network, large multi-destination resorts, extensive children's infrastructure across every property or a conventional proprietary points programme. Its strength is also its limitation: the operating collection is concentrated in Oia and its immediate Santorini environment. Guests who want radically different countries and resort types within one brand may prefer a global operator. Canaves works best for travellers who value Santorini itself, intimate scale, cave and Cycladic architecture, private outdoor space, caldera or sunset views, gastronomy and a family-rooted hospitality style.
